Sweet Tooth?


So who doesn't have a sweet tooth every once in a while?? I can justify indulging, if it's somewhat "healthy."


Peanut Butter Oatmeal Cookies--from Mary Miller (my dear mom)


1/2 c. butter

1 1/2 c. sugar (I used Rapadura)

4 eggs

1 tsp. vanilla

2 c. peanut butter ( I used Smuckers Natural Crunchy P.B.)

6 c. oatmeal (I substituted 1 cup of Oatbran)

1 c. choc. chips (the more, the better!)

2 1/2 t. soda


Bake at 350 degrees for 10-12 minutes. Enjoy!


Apricot Dream Bars--from Britta Surtees


1 c. oats

1 c. walnuts

1 c. oats

1 stick melted butter

1/2 tsp. cinnamon

~In blender, mix oats (1 cup) and nuts till it resembles bread crumbs. Then mix butter, oats, cinnamon and oat/walnut mixture. Press 3/4 of mixture in a 8x8 square pan. Reserve 1/4 of the mixture for topping.


8 oz. cream cheese

1/2 ricotta cheese

1/2 tsp. vanilla

~Mix till smooth and spread over base.

Spread 10 oz. of apricot or peach preserves over cream mixture and then sprinkle remaining oat mixture over the top. Bake at 300 degrees for 45 minutes.
